Cantonese cuisine, found in the southern region of China, relies on quick stir-frying to sear the flavors of the meats and vegetables, which combine to create a light sauce that is not overpowering to the palate. Representative Cantonese menu items include Sweet and Sour Pork and Fried Rice.
In contrast, Szechuan cooking, a specialty in north-central China, is spicier and more pungent. Ingredients such as hot peppercorns, garlic, peanuts, sesame paste, chili peppers, and spicy bean sauce combine to create unique flavors. Well-known Szechuan menu items include Kung Pao Chicken and Twice-cooked Pork.
